A Kombucha culture is called a SCOBY (Symbiotic Culture Of Bacteria and Yeast). To start brewing Kombucha, you will need a SCOBY to get you going. Once you have just one culture, you’ll be able to brew Kombucha forever because with each new brew, your brew will form a brand new SCOBY! Cultures are trained to eat different nutrients (or nutes). Most SCOBYs are fed by pure white cane sugar. SCOBYs that are trained to honey are called Jun cultures.
