Kombucha Brooklyn

 

We make a fine, fine Kombucha brew and we share our knowledge with Kombucha Home Brew Kits using the same technology that was used over the last two thousand years: by fermenting tea and sugar using a kombucha culture known as a SCOBY (Symbiotic Culture Of Bacteria and Yeast). When we add the culture to our special blend of organic, fair-trade sweetened tea, that's when the magic happens! It begins a several week-long process that transforms the tea to probiotic, yummy kombucha. Like winemaking and beer brewing, the art of brewing kombucha follows a special procedure, but is made unique depending on each kombrewer’s special knowledge and technique.

Kombucha is a fermented tea beverage that is both delicious AND health-supportive. Today, it is known around the world for its detoxifying and energizing effects. This elixir contains:

Kombuchman and Family

 

Kombucha Brooklyn began in a Williamsburg, Brooklyn apartment in 2007 when Eric Childs discovered kombucha. Eric had been suffering a pesky heartburn problem for years and started drinking the beverage in hopes it would kick that heartburn to the curb. Initially, he made kombucha solely to improve his own health. However, once he began sharing his home brew with others, he became overwhelmed by the requests for more! Before long, he was in business and the Kombuchman was born! Today the Kombuchman is CEO of the company, our master kombrewer and a well-respected teacher at various culinary and fermentation institutions.

 

In 2010 Jessica Childs joined Kombucha Brooklyn and brought her experience in microbiology and healthful culinary traditions into the fold. A fermentation junky, Jess (a/k/a Tempehst) is a published biologist and a professional chef trained at the Natural Gourmet Institute in NYC.
